I'm also going to cast another vote for Burnout Paradise. It's definitely the best racing game this gen, IMO and you can still find full lobbies despite the game being like two years old. The online community is still as strong as ever and frankly, you're going to get A LOT of content for your buck. There's just so much to do in the game that it's impossible for you to get bored of it.
The new Pac-Man Championship Edition game is also going to be coming out at the end of this month, so make sure you check that out for some old school arcade goodness.
Flower is also a great game that you have to experience. There is nothing else like it.
As for retail games, I think LittleBIGPlanet would be perfect for your son and father to play. It's absolutely gorgeous and the amount of different user generated levels is insane. The amount of creativity that went into some of those levels will blow your mind and make you think it's so awesome.
Get Uncharted 2 for yourself and father, though. You two will LOVE it. It's one of those games every PS3 owner has to experience.

i think the deciding factor is that the $100 bundle doesn't even come with the navigation controller/nunchuk thing.. thats 30 alone.. and we would want another Wand/NC so we could play 2 player(cost over $200 for everything). so we'll probably have to hold off getting those for a little while.
i think right now we are just gonna stick with getting an extra controller, some nice multiplayer games and enjoying the blueray player. we've had an HD TV for a couple years now and havent used it to its full potential.. cant wait.
