They probably will too. They've already been re-releasing a lot of GC games on Wii for the controls with the New Play Control! series. So it's obviously an avenue they're open to.

I dunno, I personally still think NSMB Wii looks fantastic. Not flashy, but very smooth, very fluid animation, just very nice to look at in general. Of course U looks better, naturally, but I think Wii looks just fine.
But yes, I have yet to see anything on PS3 or 360 that looks as good (2D wise) as Wario Land, or A Boy and His Blob, or Epic Yarn, or Muramasa. Wii absolutely killed it when it came to great (and great looking) 2D games, whether we're talking retail or WiiWare.
